Coconut Water Powder

Dehydrated coconut water, made by spray- or freeze-drying the liquid of young green coconuts, sometimes with a maltodextrin carrier. It is used in hydration powders as a natural source of potassium with modest sodium, magnesium, and sugars. Rehydration studies comparing coconut water with water and sports drinks generally find similar fluid retention, with coconut water offering more potassium and less sodium than typical carbohydrate-electrolyte beverages. Potassium content of the powder varies by supplier and carrier level.

Doses are grams of coconut water powder. Raw coconut water contains roughly 250 mg potassium and about 100 mg sodium per 100 mL according to USDA FoodData Central, and pure freeze-dried powder concentrates that several-fold, whereas carrier-diluted spray-dried grades can be half as potent; take the potassium and sugar values from the supplier's certificate of analysis. Rehydration trials used fresh coconut water at volumes replacing 100–150% of fluid loss (typically 1–2 L), which is far more than a 2–10 g powder serving supplies; the serving range reflects electrolyte-product norms rather than trial doses.

Hygroscopic and sticky because of natural sugars; needs low-humidity handling and often an anti-caking agent. Mild sweet flavor that blends well. Coconut is classed as a tree nut by FDA for allergen labeling purposes even though reactions are uncommon.
